Tequila is named after its town of origin, Tequila, in the western state of Jalisco. The word likely comes from the Nahuatl tequitl, meaning work, and tlan, which means place.
Founded by the Spanish in 1530, the town of Tequila became exclusively associated with the drink only in the late nineteenth century. The Aztec people made a fermented beverage from agave long before the Spanish arrived in 1521.
Mexican law states that tequila must be made from 100% Blue Weber agave plant that can only be produced in the state of Jalisco and limited municipalities in the states of Guanajuato, Michocan, Nayarit, and Tamauipas.
Blanco (silver) is unaged, bottled immediately after distillation, or aged less than two months in stainless steel or neutral barrels
Reposado (rested) is aged a minimum of two months, but less than a year
Añejo (aged or vintage) is aged a minimum of one year, but less than three years
Extra Añejo (extra aged or ultra-aged) is aged a minimum of three years
Blanco tequila has bold flavors of distilled agave up front, while reposado and añejo are smoother, subtler and more complex. As with all spirits aged in casks, tequila takes on the flavors of the wood as the harshness of the alcohol mellows. The base ingredient - agave - is more vegetal than grain spirits. Each bottle of tequila features its NOM (Norma Official Mexicana) number, indicating the distillery in which the tequila was produced.
Join us in a traditional tequila toast: "¡Arriba, abajo, al centro, pa' dentro!"
"Arriba" - "up" - Lift your glass high
"Abajo" - "down" - Bring your glass down low
"Al centro" - "center" - Bring your glass to your chest
"Pa' dentro - "inside"- Bottoms up! Get that tequila inside!
¡Salud!
